As we go into the last month of winter, it remains important to make sure your family is enjoying warming, nutritional meals. This week, Aurora is sharing a delicious mixed vegetable soup recipe, which you can use seasonal vegetables to make.

Ingredients:

5-6 cloves of garlic, finely chopped
2 cups sweet mixed potato, carrots, squash and potatoes, cubed
1 cup mixed zucchini, green beans and broccoli, diced
Red pepper flakes
2 cups vegetable stock
1 handful spinach, shredded
Salt and pepper to taste
1 small piece rosemary and thyme
1 rind Parmesan
Olive oil
1 onion, sliced

Directions:

Saute the onion in warmed olive oil with the garlic and red pepper flakes.
Stir in the mixed sweet potatoes, carrots, squash and potatoes.
Cover with the stock and Parmesan rind.
Season with the salt and pepper.
Simmer for 15 minutes and then stir in the zucchini, green beans and broccoli.
Simmer until tender.
Serve and enjoy.
