½ pound beetroots, scrubbed, cooked, peeled and finely chopped
2 tbsp tahini sesame seed paste
5 tbsp lemon juice
1 small clove garlic, chopped
1 tbsp ground cumin
1 tbsp lemon zest
1 pinch sea salt
1 pinch ground pepper
Combine all the ingredients together and place in a blender.
Pulse until smooth and well combined.
Store in a refrigerator for upto three days.
Serve with pita bread, chips or spread on toast.
